This is a dish guaranteed to bring a smile to Mom’s face, and it’s a recipe that even young chefs can master.
Frittata:
12 eggs
3 or 4 slices of ham, diced
1/2 medium onion, diced
1 teaspoon seasoning salt (recipe below)
2 tablespoons olive oil
1/4 cup finely shredded cheese
Seasoning Salt:
1/4 cup kosher salt
1 tablespoon garlic powder
1 tablespoon black pepper
Preheat the oven to 350 degrees.
Crack each egg individually into a small bowl, checking for any imperfections. If the egg is fine, transfer it to a larger bowl. Add the seasoning salt to the eggs, and beat the eggs lightly with a fork to break up the yolks.
Add the olive oil to an oven-proof 8-inch skillet. Heat the oil for 20 seconds over medium heat, then add the diced ham and onion. Saute the ham and onion for one and a half to two minutes, until translucent.
Remove the skillet from the heat. Carefully pour the egg mixture into the pan, and stir once or twice to distribute the ingredients. |
Place the skillet into the preheated oven, and bake for 20 minutes. Remove the skillet and check for doneness by inserting a toothpick into the middle of the frittata. If the eggs aren’t fully set, return the skillet to the oven for a few more minutes.
When the frittata is done, remove it from the oven and sprinkle the shredded cheese evenly over the top. Slice and serve. Yield: Serves 4 Recommendations: Add some toast, fresh fruit, and coffee or juice for a complete breakfast. |
